I will be doing a cooking show in my room. I am posting the recipe that I will be cooking. You can make substitutions as needed. The recipe makes 4 servings. I will be cooking Mahi-Mahi, Asparagus with Orange and Sesame, Star Anise Blckberries with Lemon Sorbet. Once again the first time I am making this so, I have no idea how it will come out.
4 portions mahi-mahi (6 to 8 ounces each)
Salt and pepper to taste
The juice of 2 limes
3 tablespoons Tamari dark soy sauce
2 inches fresh gingerroot, grated (about 1&1/2 tablespoon)
1 tablespoon vegetable or canola oil
20 blades freah chives, chopped or 3 scallions, thinly sliced, for garnish
Preheat grill pan over medium-high heat. Season mahi mahi fillets with salt and pepper. Combine lime juice, dark soy, ginger, and a little vegetable oil or canola oil in a shallow dish. Turn fish in the citrus-soy marinade and let it "hangout" for 10 minutes. Grill 4 to 5 minutes perside or until fish is firm and opaque.
Asparagus with Orange and Sesame
1 to 1 & 3/4 pounds of thin asparagus spears
2 navel oranges
1 inch fresh gingerroot, peeled
2 tablespoons toasted sesame seeds
Take one spear of asparagus and hold it at each end. Bend the asparagus until it snaps and breaks. Use this spear as your guide to trim the ends of your bundle of spears.
Cut the ends off two navel orangesand stand them upright on a cutting board. Remove skins in strips using sharp knofe to cut down from the top of the orange. Reserve the peels of one orange. When oranges are peeled and trimed slice into 1 inch rounds and set aside.
In a skillet with cover, bring 1 inch of water to a boil with teh peels of 1 orange and gingerroot. When water boils, add a healthy pinch of salt and asparagus. Simmer 3 to 5 minutes until just tender, then drain. Assemble a few spears on each dinner plate. crisscrossing the spears and orange slices. Finiah with a sprinkle of sesame seeds and top with 1 portions of grilled mahi mahi. Garnish plates with chopped chives or scallions and serve.
Star Anise Blackberries with Lemon Sorbet
3/4 cup water
1/4 cup cugar
2 star anise
1 teaspoon lemon juice
1 pint blackberries
1 pint lemon sorbet
8 Piroline cookies or other wafer-style dessert cookies
In a small saucepan over morderate heat, combine water, sugar, star anise, and lemon juice. Stir and cook until sugar dissovles and water comes to a bubble. Add blackberries and cook 30 seconds. Remove pan from heat and let stand a minute or two, stirring occasionally. Remove star anise. Scoop lemon sorbet into dessert cup. Top with blackberries and garnish with 2 cookies.
